(Rosmarinus officianalis)
This is an evergreen shrub that grows to 3ft (1m). The aromatic leaves are needle shaped and the flowers are pale blue. It requires a well-drained soil in a sheltered position. Propagation is by heel cuttings in spring or by root division in spring and autumn. Protect young plants from frost.
Harvesting
Pick fresh leaves as required and cut shoots for drying.
Uses
Used extensively in roast meat dishes and is particularly good in stuffings.
(Ruta graveolens)
This is a hardy evergreen shrub that grows to 2ft (60cm). The leaves are a blue green colour and the flowers are yellow. It will grow in any soil but requires a sunny position. It will seed itself or cuttings can be taken in early summer.
Harvesting
Pick leaves as required.
Uses
Basically a decorative plant but small quantities can be used to flavour salad dressings.
