Herbs - Parsley to Purslane

Parsley

(Petroselinum crispum)

This is probably the best-known and most widely used herb. It is a biennial plant but is usually grown as an annual. It grows to about 1ft (30cm). There are a few varieties; most of which have curly leaves but some varieties have flat leaves. These are usually a bit stronger flavour. It requires a well-drained soil in a sunny position. It is difficult to propagate from seed, as they are very slow to germinate. Soaking the seed for 24 hours in tepid water can speed the germination process.

Harvesting

Pick fresh leaves as required.

Uses

It is used in many culinary dishes.


Pennyroyal

(Mentha pulegium)

This is a member of the mint family. It only grows to about 6" (15cm) and has a creeping habit. It requires a well-drained rich soil.Propagation is by root division.

Uses

It is an ornamental plant that can be used to make an aromatic lawn.


Purslane

(Portulaca oleracea)

This is a sprawling annual plant that grows to 6" (15cm) with rosettes of fleshy leaves and yellow flowers. It requires a well-drained soil in a sunny position. Sow seeds in late spring when danger of frost is past.

Harvesting

Pick leaves as required for use either fresh or for drying.

Uses

Young leaves are used in salads. Older leaves are cooked like spinach.
